About David

I am an Executive Chef with over 20 years' experience in organisations around the world. In my recent role in charge of a facility preparing all the food for Qantas 1st and Business Class, I identified a problem with the antiquated food safety documentation process in global airline catering companies. I have designed a hardware/software solution to sell to an addressable market of around $340m pa.

September 2012 - February 2016

Stix Catering is the primary contractor for Etihad First and Business Class and Qantas International First and Business Class catering and Domestic Business Class catering, cooking, packaging and delivering up to 5000 dishes per day. The company holds the sole contract for Sydney Macquarie Bank Global and Shelley St Headquarters’ in-house catering, events and boardroom fine dining. Stix Catering is a premium events catering company, holding more awards than any other premium caterer in the Sydney catering industry. Managing a roster of 40 chefs, with up to 32 chefs populating the brigade on any given day, 365 days a year, a three-fold increase since commencement of employment. Accountable for hosting official workshops at Stix Catering every 3 months for Q-Catering port representatives to trial and finalise recipes for globally instituted Qantas International First and Business Class menus. Collaborating with QA/HACCP department to design and implement practical cleaning and maintenance systems in all four sites to fulfil and exceed contractual HACCP requirements. Writing and implementing over 150 Stix Standard Recipe Cards for Macquarie Bank and Events portfolios and continuing to customise and standardise over 300 Rockpool Consulting recipes for the Qantas portfolio. Working with HR to formalise employment contracts detailing specific job descriptions and formally address all kitchen-related HR procedures including hiring of, promotion of, disciplinary matters relating to, and the firing of employees. Performance managing senior roles to maximise productivity, staff morale and their professional growth.

Headed a company of 65 across Sydney and Melbourne headquarters' producing premium meals for high profile clients such as Virgin Airlines, Qantas Airlines and high volume products for companies such as 7-11. Also responsible for the conception, management and execution of premium events and functions across Sydney and in Melbourne for clients such as Sony, Tropfest, Annual Media Awards et al. All aspects of menu and recipe design, staff acquisition, chef management and training, supply ordering, logistics and project management.
