These businesses are very boutique but I suspect have the potential for a national audience.
Papalote sells their packaged salsa in Wholefoods and has the makings of a strong brand.
Cafe Gratitude is an extremely professional business with restaurants in LA, SD and the Bay Area.
There brand is particularly sophisticated for a small business. The naming of their menu items pretty much captures it.
There should be a Nopalito in every city in the US ;)
After eating there for several years the demand has not diminished. You’re always looking at a 30min wait in the evening.
